This Kiritsuke is made with Home made Carbon Damascus steel and a beautiful Burr Elm Handle
Steel:
I hand-forged the Damascus steel for this 2.5 mm blade myself from 1095 and 15n20 high-carbon steels. The geometry is focused on food release and cutting performance. The steel has been given a forced patina to start the aging process and help you develop your own unique patina over time.
This handmade chef’s knife is a compact, hard-working all-rounder, built for everyday use. The cutting part measures 170mm , offering close control and an easy, natural feel on the board. The traditional hidden-tang handle creates a slim, comfortable pinch grip while maintaining exceptional strength. Light and well balanced, the knife still carries solid thickness behind the heel, giving it the strength and confidence needed for tougher jobs.
