Handmade in Nottingham

I trained as a blacksmith in the mid 80’s in France. Soon after I moved to England and my career took a different path. That love of creating something unique with my own hands has never left me and I decided that knifemaking would be an interesting challenge and it certainly is. The knives I create are all individually crafted.

The way I make knives has evolved over the last 3 years. The steel I use are some of the best available for making kitchen knives. I favour Carbon steel, my current favourite is Apexultra. Stainless steel has the advantage of being lower maintenance so it is important to find the best options here too. I am continuously aiming to improve my manufacturing process by understanding knife geometry to make a better tool. My preferred construction now is the Japanese style “Wa” handle. It combines a strong build with a great aesthetic. 

I have gone back to the basics and learned how to sharpen on stones rather than using a knife sharpening system which has worked well but has its limitations. Working with sharpening stones is therapeutic and the way forward in my journey.

I have used more wood this year for my handles because there are some stunning pieces out there. Wherever possible I use recycled materials, it is all about finding the right quality and size.

I do all the cooking at home and like to experiment. It's a good outlet to test the balance between the look and the practicality of my work. It is so easy to get waylaid by flashy designs that don’t really work in the real world.

I understand the importance of having the right knife. We all have a favourite knife that has that magic combination of performance and comfort. The right knife becomes an extension of your brain through your hand. I create knives that I hope will become your most valued kitchen tool.
