This Kiritsuke is made with V-Toku2 Core Suminagashi with carbon cladding and a handle made from repurposed Rosewood
Steel:
I forged this 2.8 mm V-Toku2 Suminagashi with a hand-textured finish. The convex grind enhances food release and cutting performance. The knife is finished with stones, Nisshozan Shiro Suita and Ohira Uchigumori fingerstones.
This handmade chef’s knife is a Kiritsuke-style blade.It's an all-purpose workhorse designed for daily use. With a 175mm cutting edge, it offers precise control and a smooth, intuitive feel on the board, making every cut effortless and accurate. The traditional hidden-tang handle creates a slim, comfortable pinch grip while maintaining exceptional strength. Balanced at the pinch, the knife carries solid thickness behind the heel, giving it the strength and confidence needed for tougher jobs.
