This Kiritsuke is made with Takefu super blue stainless clad San Mai and a two part handle made from Richlite Black Diamond and Elm Burl
Steel:
I forged this 3.5 mm Takefu Super Blue stainless-clad San Mai with a hand-textured finish. The convex grind enhances food release and cutting performance. Both steels have been given a forced patina to start the aging process and help you develop your own unique patina over time.
This handmade chef’s knife is a Kiritsuke-style blade with subtle Bunka influences—an all-purpose workhorse designed for daily use. With a 195mm cutting edge, it offers precise control and a smooth, intuitive feel on the board, making every cut effortless and accurate. The traditional hidden-tang handle creates a slim, comfortable pinch grip while maintaining exceptional strength. Balanced at the pinch, the knife carries solid thickness behind the heel, giving it the strength and confidence needed for tougher jobs.
