This 9½ " knife is made 80 CRV2 carbon steel with a 5600 years old Bog Oak handle.
Steel: 3 mm 80 CRV2 carbon steel. Convex grind for better food release. Rich patina to give that well used look but the knife is brand new. This will give the user the freedom to add personality to the blade .
80 CRV2 Carbon steel has good all round performance and is well suited for fine culinary knives.
I made this blade a year ago but couldn't decide what handle to give it and forgot about it, but recently took delivery of some top quality bog oak and thought it would be the perfect match. The blade is very long and thin, ideal as a meat slicer. Probably not an all rounder but it's well balanced and could be used for choping large vegetables.
