One of a kind handmade chef's knife.
This 8″ knife is made with Takefu super blue stainless clad San Mai and a stunning piece of highly figured walnut for the handle.
Steel & Grind:
I forged this 3.5 mm Takefu Super Blue stainless-clad San Mai with a hand-textured finish. The convex grind transitions into an S-grind, giving the blade a lively feel with excellent food release. The subtle hollow reduces drag and helps food fall away cleanly, while the convex shoulder keeps the knife stiff and strong through heavier cuts.
The knife has been etched and then polished to give it a very individual look.The patina will appear with use as part of the aging process.
This is a large yet agile chef’s knife, equally at home with delicate, precise tasks and heavy-duty chopping sessions.
A large part of the carbon steel is exposed on this blade so extra care must be taken with maintenance.
