This 8″ knife is made from stabilized bog oak and ApexUltra core steel
Steel: 2.7 mm San-Mai ApexUltra core clad with Nickel and 80crv2 carbon steel forged by Korben Bloomfield. Convex grind for better food release and a dark patina
Apexultra is a high performance steel specially develloped for high end culinary knives, It can achieve high hardness with fantastic edge retention.
Handle: Japanese style construction. Stabilised 5400 years old bog oak and green G10 spacer
