This 8″ knife is made from beautiful Amboyna burl and ApexUltra core steel

Steel: 2.7 mm San-Mai ApexUltra core clad with Nickel and 80crv2 carbon steel . Convex grind for better food release and a dark patina that will help build your own patina over time.

Apexultra is a high performance steel specially develloped for high end culinary knives, It can achieve high hardness with fantastic edge retention.

Handle: Japanese style construction with fine taper to the choil for a very comfortable pinch grip. Stabilised Amboyna burl in blue
